Description

김치찌개 (kimchi-jjigae) or kimchi stew is a popular Korean dish made with kimchi, tofu, and other ingredients, such as pork, scallions, onions. It's believed to have originated in the mid-Joseon era (~1500s).

Steps

  1. Marinate pork belly in mirin & black pepper for 15m
  2. Cook kimchi until soft
  3. Add marinated pork belly, kimchi, onion, mushrooms, tofu, water, and broth sauce
  4. Bring to a boil then lower to medium heat for another 10-15m
  5. Top with sliced green onions
