Description

Bún bò Huế or bún bò is a Vietnamese rice noodle (bún) dish with sliced beef (bò), Vietnamese sausage, and sometimes other varieties of meat such as pork knuckles/hock, oxtail, etc.

The dish originates from Huế, a city in central Vietnam. The dish has a mix of spicy, salty, and savory flavors. The predominant flavors are those of lemongrass and shrimp paste

Steps

  1. Clean the meat: boil, drain, and rinse
  2. Add cleaned meat, broth, lemongrass, and onions. Fill with water almost to brim. Boil then drop to medium-high heat.
  3. Add seasonings. Simmer until meats are tender. Pork: 1 hour, beef: 2-3 hours
  4. Remove meat. Slice when cooled.
  5. In a separate pan, saute anatto seeds in oil on medium heat until bright red.
  6. Add shallots and garlic, saute until brown
  7. Add this aromatic mixture into the broth pot
  8. Boil noodles
  9. Mix 2 cups of water with 1 juiced lemon. Add thinly sliced lemongrass (remove fronds - look like mini bananas). Let sit for 30 minutes
  10. Soak dried Thai chiles in warm water for 20 minutes
  11. Add sate ingredients to pan on medium heat. Stir until brown. Reduce the paste - ~30 minutes.
  12. Assemble bowl
