Description
Bún bò Huế or bún bò is a Vietnamese rice noodle (bún) dish with sliced beef (bò), Vietnamese sausage, and sometimes other varieties of meat such as pork knuckles/hock, oxtail, etc.
The dish originates from Huế, a city in central Vietnam. The dish has a mix of spicy, salty, and savory flavors. The predominant flavors are those of lemongrass and shrimp paste

Steps
- Clean the meat: boil, drain, and rinse
- Add cleaned meat, broth, lemongrass, and onions. Fill with water almost to brim. Boil then drop to medium-high heat.
- Add seasonings. Simmer until meats are tender. Pork: 1 hour, beef: 2-3 hours
- Remove meat. Slice when cooled.
- In a separate pan, saute anatto seeds in oil on medium heat until bright red.
- Add shallots and garlic, saute until brown
- Add this aromatic mixture into the broth pot
- Boil noodles
- Mix 2 cups of water with 1 juiced lemon. Add thinly sliced lemongrass (remove fronds - look like mini bananas). Let sit for 30 minutes
- Soak dried Thai chiles in warm water for 20 minutes
- Add sate ingredients to pan on medium heat. Stir until brown. Reduce the paste - ~30 minutes.
- Assemble bowl
